How do I make the perfect cheese on toast?

First thing is to get a good quality loaf of crusty white bread.  Fire up the grill and put some foil down.  Place thick cut slices on the tray.  Watch the bread until it turns a light brown.  Take it out.  Turn over the toast.  Slather on some sun-dried tomato paste.  Break up some blue cheese and put on more than you think is socially acceptable.  Now a quick sprinkle of sea salt. Pop it back under the grill.  Watch it until the cheese is bubbling.  Then wait till the edges of the toast start to burn.  Take them out.  Slide them onto the plates and add a couple of leaves of basil.  – You’re welcome.
